For this week's post I decided to share my go-to recipe when I want to cook something delicious fast. I've been in a hurry lately and there's been little time for anything else than school or sleeping so this recipe definitely fits my schedule.
Ingredients:
chicken breasts 500 g
fresh spinach 70 g
bacon (optional)
penne pasta 250 g (~5 dl)
cream 1,5 dl
shredded cheese 150 g
garlic 2 cloves
salt
pepper
First measure about 2 liters of water in a pot and wait until it simmers. Add some salt and the pasta. Let it simmer until the pasta is "al dente" and meanwhile do the rest of the cooking.
Combine chicken and chopped garlic in a large pan. You can season the chicken with salt and pepper or any spice you like. Cook and stir until chicken is cooked. The original recipe included some bacon but I didn't add it in this one. If you want to add some, just cook it first before the chicken, put aside and chop it and add in later.
Lower the heat, add spinach (and bacon) and mix in the cream once the spinach is softened. Add the drained pasta and shredded cheese of your liking (I used cheddar) and mix it all together. You can save some of the cheese to sprinkle it on top of the meal.
Serve immediately and enjoy your meal!
A few words to say: The chicken I used was marinated but you can use unseasoned as well. However I took some the marinade off because there was a lot of it. Also, I recommend always using fresh spinach! It's so much better than frozen.
